First, we start with a great cut of New York strip steak. Then comes the seasoning with garlic, pepper and rosemary in olive oil rubbed in.
Branches of rosemary bush are put on the grill. Because they are still green, abundant smoke is produced. The seasoned steaks are placed on top and covered with a pan. Just a minute or two is all that's needed to flavor the meat without cooking it. Refrigeration over night sets the aromatics.
